Love potatoes? Me too. But my waistline needs a break once and awhile and these low carb air fryer radishes are the perfect substitute!
My air fryer sat in my Amazon cart for at least two months. I was completely intrigued with them, but questioned whether I’d use it enough to justify the cost and storage space. I saw people air frying their favorite fried foods – tater tots, chicken strips, french fries. All foods that I love but don’t eat on a regular basis.
It wasn’t until a girlfriend of my mine started posting Instagram stories of her cooking veggies in her air fryer, that I decided to pull the trigger. And guys. It was the BEST decision I ever made! Well, maybe not best ever, but it was a damn good decision.
I’ve been air frying every vegetable imaginable, so I got to thinking – why not air fryer radishes?
In my Low Carb Zuppa Toscana Soup I substitute radishes for potatoes, and you would never know. The taste of a cooked radish tastes so different than when it’s raw. Even my raw radish-hating husband agrees!
Then I tried putting them in a crockpot roast in place of potatoes. Still fantastic.
So I decided to level up and try air frying them. And since you’re reading this recipe, it will come as no surprise to you that air fryer radishes are also great.
Within 15 minutes you’ll have crispy, delicious air fryer radishes that you’ll be mistaking for potatoes. That is a fraction of the time that it takes to roast vegetables.
INVESTING IN AN AIR FRYER
If you don’t have an air fryer than let me just tell you that I completely understand that it’s an investment. They’re not cheap. And you want to be sure you’re going to use it if you pay one $100 for it.
That was my biggest hesitation – would I use it enough to justify the cost? You’ll have to decide for yourself if you’ll use one, but I’ll tell you that not only does it cook food in half the time that the oven does, but it’s super easy to clean and it made the best buffalo wings I’ve ever had (another recipe for another time).
If you do decide to purchase do your research. This is the model that I went with after many reading many reviews and comparing air fryers. I wanted one that was XL so that I could cook more than one meal at a time. We’re leftover people, so I wanted something that I could get as close to four portions in at a time to make dinner and lunch.
I’m incredibly happy with this air fryer. The size, the ease of cleaning, and how it cooks have all been wonderful!
REMEMBER: Like any vegetable, the smaller you cut it the quicker it will crisp up
